Our local fish sauce product from Ban Kram, Klaeng District, Rayong has arrived! It's late because I couldn't get it before others; I had to place a pre-order and wait over 3 months to receive it.

 

The aroma of this fish sauce concentrate is absolutely incredible!!! You can smell the intense seaside sun, the wind, and a clean saltiness. This is a pure fish sauce concentrate that has not been mixed or altered with anything, so it is saltier than typical fish sauce. You might need to use it sparingly.

The ingredients include pla hua on (a type of small, soft-headed fish), anchovies (pla sai tan), sea salt, and sugarcane, all fermented together. This recipe comes from a grandmother that the seller, Kad San Khayom, was fortunate enough to meet. The local sea-dwelling people there ferment their own fish sauce for personal consumption, and each household has its own unique recipe.

Ingredients: Crafted from a blend of small, whole fish, salt, and sugarcane. Our fish sauce is naturally fermented under the hot sun for a full 7 months to develop its unique flavor.

As a Seasoning: A splash adds an authentic, savory aroma to any dish. It's especially delicious when whisked into eggs for a Thai-style omelette.
